Here's a few I just heard from his recent interviews which I think are less known.

He hates wasting food. On the set of Rumble, as they had buffets unlike in HK where they were given lunch boxes, and the food was much better and different, the crew who got there first would take a lot, and end up being unable to finish even half of it. As a result 40 others had nothing to eat. Jackie suspected what was going on, so the next day, he went up to the first people who got to the buffet. As they sat down to eat, he just stared at them. They asked him what's wrong, and enraged, he shouted "I'm going to watch you finish that." They were terrified but still couldn't finish. He forgave them but warned that from that day onwards they should only take what they can finish.

Another one involving catering; his son Jaycee was visiting his Dad's set for the first time when he was 9. He got excited at seeing the buffet and took everything he could. Jackie saw this, but instead of reprimanding him directly, scolded a crew member who was going to dump his unfinished rice. Jaycee was petrified and started distributing his food to everyone in the queue, then walks past his old man assuredly with an empty plate.
