so what exactly was happening during the seizures...?

I think it pretty much froze them in place. Caliban mentioned not being able to breathe. And they clearly couldn't move. It also seemed painful. Being "frozen" like that could possibly kill people if it goes on for too long.

This is all guesswork, though. I don't know for sure if that's what really happens, but it seems likely.

If you saw X-Men 2, you will remember that Magneto told Wolverine that if Charles were to use his Cerebro at full concentration, he could kill everyone on the planet, including all mutants. So, when his Alzheimer's seizures happen, he loses control of his powers and is literally able to paralyze anyone within a certain distance of him. If he isn't stopped in time, he would kill everyone nearby.

I understood it this way as well. Xavier could not control his super mind bullets, and thus most people were paralyzed by them. The movie did allude to him killing all the mutants at the academy, which adds higher tension to his attacks and makes Wolverine all the more heroic for successfully administering the antidote.

Yes, Xavier is show several times to stop people dead, but not time itself. This is a version of the attacks he experiences. My belief is that Xavier's first attack came while he was in Cerebro. And that was the end of that.
