Use cast iron.
Cast iron is not without its problems.
Why?
I was going to say that! No chemicals, dirt cheap, durable, easy to care for. I do most of my cooking in a set of cast iron pans I've had for decades.
Stainless steel, plain carbon steel, cast iron, or hard anodized aluminum (if you can find any that doesn't have an added "non-stick" coating in addition to the hard anodizing, which isn't easy to do).
Nine months later I bought two of them.
