What was the last meal you cooked yourself?


I mean actually took ingredients and made something, rather than just getting something from the freezer and heating up.

I've just made a veggie bake consisting of ;
sweet potato
Leek
Red onion
Green pepper
Carrots
Spinach
Cauly and broccoli mix.
Mixed herbs, salt and pepper, a few knobs of butter and a drizzle of olive oil.
Covered and baked for 40 mins.
Uncovered then topped with mozzarella and tomatoes and baked again for 20 mins. (At this point I'd usually beat a few eggs and tip it over and put back in to bake, but i have none today).
Served with a dinner roll.

I'm stuffed, it was great.

Baked chicken breast with a quick mixture of brown sugar, paprika, garlic powder, salt n pepper and olive oil.

And garlic baked broccoli.

I'm about to sit down to a dinner of a chili-cheese pupsa topped with avocado and salsa verde, some black beans, and tomato-shallot salad.

Vegetarian food is SO boring and penitential!

Stuffed peppers, Hungarian style with lots of Erős Pista.

I don't cook. I just get take-out from my local restaurant. Tomorrow I'm going to get a burrito.

Last thing i ate was a tuna and cheese and onion sammich mid after noon yesterday. made it myself!
Its mid morning now , you could say ive missed 2 meals , but that's just my weird eating schedule
I'm off to make my version of a mcBreakfast, bacon, egg n cheese roll

Chicken Curry

White onion, garlic, pureed ginger, and Serrano/Jalapeno peppers reduced in about a cup of pure lard.
Two different curry powders, garam masala, salt/pepper.
2 tbsp tomato paste browned as can in as shallow an area I can create (called "pinseting" and makes me feel fancy)
Chicken stock.
2.5 to 3 lbs of boneless chicken thighs scissored into small chunks.
(occasionally I add a diced green apple in final 15 minutes)

Served with dollop of yogurt, handful of peanuts, ginger, diced sweet onion, and a tsp of mango chutney at plate's edge.

I make this 2 to 4 times a month.

I've not heard of apple in curry before. Its sounds good though.

If I'm out of chutney, I might do the apple. Believe it or not, I toss in raisins when I eat the leftovers. The sweetness is a nice contrast.
