What'd you have today??


Earlier I had a nice hot bowl of hotdog stew that I made the other day. And right now I'm having a big bowl of iceberg lettuce with
"grilled" chicken breast that was marinated in Italian dressing, and tossed with blue cheese dressing. Yum!! πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹

Jesus everything sounds so good!! I'm beginning to regret posting this as I'm on lowcarb and it's giving me cravings for the no no stuff!! πŸ˜…πŸ˜…πŸ˜…πŸ˜…

I had a bowl of special K cereal with strawberries for breakfast. For lunch, I had two veggie wraps with some raspberry ice tea. I haven’t had dinner yet but, I plan on making some pasta with some marinara sauce. :)

I miss having our weekly macaroni day!! I'm low carb, so on pasta day, I just eat the sausage, meatball, and pork that we put in our sauce and have salad or steamed veggies with it.

Today cauliflower is being used in place of potatoes and pasta.

Oh yes. I've made homemade pizza with cauliflower crust twice. I wasn't crazy about it because it didn't taste like pizza. I'd rather just buy real pizza and scrape off the toppings into a bowl and dive in.
I like whipped cauliflower as a substitute for whipped potatoes.

I purchased the frozen mashed cauliflower twice. Somehow gravy did not go well! To be honest I prefer cauliflower as cauliflower, steamed with lots of butter!

It's better if you make it yourself. Add as much butter as you want and some cream or milk, salt and pepper and whip it up!! I don't put gravy on it. I just eat it as is.

It turned cold again in Mississippi so I made homemade chili. I try to keep the ingredients stocked, pantry & freezer in order to stew a batch when hungry for it. I used my 10 quart pressure cooker because it was too late to simmer in my Nesco cooker. It turned out very good.

Cookie Crisp cereal for breakfast and a buffalo chicken calzone for lunch (and leftover calzone for dinner). The type of eating a lazy Sunday afternoon on the couch was made for.

For breakfast I had eggs over medium with grits and toast.

Dinner was blackened catfish with salad and green beans.

That appears to be southern food...my kind of eating except for breakfast. I can’t eat eggs in the morning. Love those grits though.

How did I know? πŸ€” Hmm? I was going to say LA because I live on the MS Gulf Coast and the restaurants all cook alike. Blackened catfish gave it away. I’m from Florida, but we fried our catfish when we caught them. Grits are the best side for fried fish along with coleslaw. There’s one dish I’m curious about...grits with shrimp. Doesn’t sound good to me. Why ruin one or the other?

It’s funny, Ive never wanted to cook shrimp and grits at home but I always see it at restaurants and I have had it several times and liked it. I would just rather have shrimp boiled, fried, in gumbo, etouffee or whatever than that.

I forgot, we prefer catfish fingerlings. I cannot eat channel catfish! Yucky!

Well one things for sure, the smaller the catfish the better they taste.

Breakfast - Kind Bar

Lunch - yogurt and wheat crackers with peanut butter

We grazed on snacks during both football games. Cheese and pepperoni, cocktail shrimp, veggies/dip, and potato skins with cheese and bacon.

Fried chicken $5 fill up. Pretty good deal.
