My Funny Valentine - (as performed by Ella Fitzgerald with Nelson Riddle)
Round Midnight - (many versions but esp Joe Jackson on the T Monk tribute That's How I Feel ...)
Ganz Allein - (Beach Boys singing In My Room in German)
Pilentze Pee - Les Mystere des Voix Bulgares
Fourth of July + Abilene - Dave Alvin. Not new but more recent than a lot of my choices.
Blue Sky - Allman Bros. Wonderful guitar interplay, and a nice little love song.
Mr Tambourine Man - Bob Dylan. It's a beautiful poem if you look at it that way.
Water Song - Hot Tuna, on the album Burgers. I love Jorma Kaukonen, so I had to pick something from his vast catalog
In Christ There Is No East Or West - as played by Leo Kottke but I think it's a John Fahey song. I like it's sonorous simplicity, then Leo puts it into fast finger picking mode then brings it back down to the simple melody again.
Well All Right - Buddy Holly

Personal favorites. Maybe intentionally eclectic, but these are truly songs that I've enjoyed many times that have thrilled me.
