Why do people like hiking so much?
Unless it is very scenic or leading to a scenic location it is just work, and even when it is scenic it’s usually not worth it. I’m not necessarily lazy I just don’t understand the appeal.

Why do people like anything? Some people are just outdoorsy and enjoy being outside.
I'm one of those people who doesn't see the appeal in that, either. More outdoor space for those who do, haha!
Because of the animals. It is always such a thrill to encounter wildlife, well maybe not the maneaters, but the others. Have seen moose, deer, raccoons, coyotes, snakes, all kinds of birds, owls, fox, otters, beavers, squirrel, boars, wild horses.
shareI hike for hours every day. Cut all my own trails in the woods and everything. Gets the blood pumping and clears your head. I often talk to myself too. Helps me sort out my thoughts. After a good hike, I feel spiritually cleansed, emotionally unburdened, and mentally sharp. It's like therapy. It also helps with hangovers.
shareSome people like being outdoors, and don't have issues with fitness. I do find it cute when they take their dogs along. The dogs have no issues with the trip, and find it an extra-special adventure/walk. Some hikers will even train their dogs to wear a special vest with pouches on it to hold their dog bowl and water bottles, so that the dog won't be thirsty during the hike.
I personally hate hiking, and was forced to do it twice during my childhood. Both times were a hot, sweaty, dirty nightmare, and I made a point of forgetting as quickly as possible all the crap I had to deal with on both occasions. Once I had to hike through both town and woods in Wisconsin, during the summer, because the people in charge of my school were too cheap to rent buses to take us to some remote playground in the forest (I'm still pissed over that one); and another time I hiked through the sandstone "canyons" of Indiana. The worst part was, the adults tricked me and many other kids by not telling us it was a long hike, for either situation.
To this day, I loathe and despise hiking. I don't care if other people do it. The nature/outdoorsy types can do it all they want. But don't expect me to ever come along, not even if I was physically fit.

We have the Appalachian Trail 5 minutes away though I admit the Hudson River Valley is nowhere near as rugged as the big Canadian Trails
Not really a fan of hiking, but I love cycling.
