It's not my favourite, but I have a recipe that is quite nice. You should really add vinegar and sugar to balance the earthy flavour of the beetroot.

Nice, I have a nice recipe too. I add onion and garlic to balance the sweetness of the beets.

Yes, I add that as well. And a big dollop of sour cream, of course. I'm not a fan of beetroot on its own.

I had Polish white borscht at a wedding one time. The best thing about it is that there are no beets in it.

the one I had didn't have any eggs - potatoes instead. Very salty but tasty.
