Because if you're watching it, that means the lid is off, and heat is escaping. Put the lid on. It'll get to a boil in half the time.

I was actually thinking of putting in a disclaimer about glass lids, but as long as you're using the lid, we are on the same team (the thermal efficiency team, I mean)

Glass lids will fog up anyway, so not exactly watchable.
