Best way to store coconut oil?

I'm going to get my first jar of it when I finish this. I read you can store it outside the fridge, or in it. In it, it can get hard. Does anyone store it on the regular shelf, not in the fridge? Any problems? I want to try cooking with it and using it on bagels.

I wondered too. In the summer my kitchen gets hot and the coconut oil is liquid. In the winter it stays solid. I've never put it in the fridge, but maybe I should?

I read and heard that either way is okay. Right now, it's on my counter.

I've always stored it in my pantry and never had any problems with it. I've never put it in my fridge.

I've never bought any coconut oil. But, unless the label specifically says "refrigerate after opening", I store products in the manner in which they were on display in the store ... shelf, frozen section, chilled. I buy my produce at the nearby "indie" stores, but I've been in enough supermarkets to know which items should be kept reasonably moist (as in Safeway's misting section) VS items that I keep cool and dry.

It is shelf-stable. I don't put it in the fridge.

It gets rock solid in the fridge. Treats made with it are put in the frige to harden. Don't store it in the fridge.
The darker the storage the better. Keep it out of direct sunlight. Best to keep it in the container it is in when purchased and store it back in the pantry or in a cabinet.

This works for me.

Thanks for the info, right now, it's on the counter. I'll put it in the cabinet. :O)
