how many seasons do you think this will go?

We got already a lot of loose ends tied in Season 1 and 2, I am confident they can close most of the open ones in a proper final season, especially because it was communicated all time as the final season. So no stupid open end as we had with the sad end of Clone Wars. I don't see much left after Season 2 except finishing the characters end.
The most hopes I have on a meeting between the Batch and Boba, his story didn't felt closed in Clone Wars. He should be just 2 years older as Omega. They could tie her to Mandalorian by revealing her to be The Armorer or she is just living a happy life somewhere far away with the rest of the team. Furthermore I expect a proper send off for Cody and the rest of the Batch. It might be a sad one, but hopefully an interesting story.
