I'm watching now the most recent episode where she is preparing for her Mother's " 50th" Birthday..... how can her Mother only be 50 when Mayim herself is 47 ?????

Artistic license. Besides, I think Kat's character is supposed to be in her early 40s. Her mother, being the vain person she is, does not like to admit that she is "older", even though she moved into an old age home for a while.
Her "50th" birthday is probably at least 15 years behind her.

Her mother was easy and developed early?

It's a mystery that thankfully will never be solved by the show as it's Call Me Cancelled now.
