Why have the tuna setup?

Murtaugh is shown to love Tuna. And then we have the Subway product placement scene where Leo gets stuck with Tuna. "They fuck you at the drive thru!" Why not have the closer scene where Murtaugh is like "gimme the tuna, take my steak sandwich"? The movie has a ton of these non closer segments.
