Probably to get a better visual and better angles with cameras. I know I was a stand in once for a small movie and actually, they never removed the headrests. But like all movies, the car you see is not always a perfect car neither. It's obvious that a "movie" car has things removed, but we just do not see it because they were never going to film those parts of the car anyway.

In this case, you saw it once and again. The director is going to have some explaining to do.

Hmm I've never noticed that before. Maybe for easier filming so the headrests don't get in the way?
