The only book I've read on Washington during the war is The Winter Soldiers about the 1776 Trenton "Christmas" Campaign. It's a darn good book though it's not exclusively about GW.

Washington's Crossing, by David Hackett Fischer. Excellent telling of the risky Trenton campaign.
